Good Recipes!

I got this recipe from a dish brought to a lunch carry-in for a class I took last summer. Everyone loved it and wanted the recipe. I finally made it for a cookout and almost everyone asked me for the recipe. It was really good! This may be my "go to" dish to bring places because the only chopping needed was the onion. :)

Oriental Salad

3 Stalks Romaine lettuce (torn in pieces)
2 cups Mozzarella Cheese (finely shredded)
1 small can rice chow mein noodles (fine)
1 small bag sliced almonds
1 bag regular croutons
1 medium red onion (coursely chopped)

Dressing:
1/2 cup sugar
1/4 cup vinegar (I used red wine vinegar)
1/2 cup oil
2 tsp. salt
1/2 tsp. pepper
Boil together-cool completely- add 1 tsp. Poppyseads. Add dressing to salad as needed. Dressing keeps well in the fridge!


I also tried another new recipe from www.kellyskornerrecipes.blogspot.com Apparently it's a common Southern dish but seeing as we are Northerners, I had never tried it! It was another easy dish that turned out great.




Poppyseed Chicken
2 or 3 chicken breasts (boiled and cut to bite sized pieces)- I had JW grill the chicken again because I don't want to look at boiled chicken haha
1 16 oz sour cream (I used reduced fat)
2 cans of cream of chicken soup
2 Tblsp. poppyseeds
Ritz crackers
1 stick of butter (a little much- could reduce amount or maybe even spray with pam?)

Mix first 4 ingredients together and pour in greased 9 X 13 pan. Top with crushed ritz crackers. Melt butter and pour over top. Bake 20-30 minutes
at 350 degrees. Serve over rice.
